Cooking over an open flame has been a tradition for thousands of years, with evidence suggesting that early humans hunted and cooked their food in this way. This ancient practice continues today. Welcome to The Wild Grill, where we dive into the world of wild game cooking. From the smallest fish to the largest mammals, we prepare delicious wild game dishes on the outdoor grill.

Each episode is packed with recipes, tips, and insights about the ingredients, with a special focus on the main protein. We’ll feature a variety of wild proteins, including salmon, bear, geese, and even exotic meats like crocodile and buffalo. While we highlight wild and exotic game, our recipes can easily be adapted to include more familiar proteins like beef, pork, turkey, or chicken. These recipes are designed to be updated and customized to fit your taste.
Not only will you discover mouthwatering recipes and valuable cooking tips, but you’ll also learn about the animals featured in each episode. And, of course, every meal deserves the perfect drink to accompany it. We’ll recommend the ideal brew, wine, or spirit to pair with everything from pheasant and elk to fresh tuna.

Hey guys! I’m Lindsay Lester—wife to AJ and mama to my sweet girls, Addison and Sadie. Three years ago, we made the courageous decision to step away from our fast-paced life, choosing instead to embrace a slower, more intentional way of living. I left my career to homeschool, allowing us the time to focus in on what truly matters, God, health and those we are blessed to share life with.
Growing up in the country has given me a deep love for the outdoors and all the beauty and bounty it has to offer. That connection to nature has guided my journey of exploring what a sustainable life looks like for my family. A new joy of making delicious, nourishing recipes has replaced the daily race of just trying to keep up. Now it’s about savoring the moments, the meals and the people right in front of me.

Executive Producer: Simon Hutchings
Simon has worked in the television/film/media industry for over 30 years working on a range of projects from corporate, to broadcast, to feature films. While filming is where Simon started his career, editing is Simon’s passion. Television networks all around the world has broadcast Simon’s work on the internationally distributed series Don’t Forget Your Passport Cork Screwed TV, and Dream Car Garage. Canada in the Rough, Bob Izumi’s Real Fishing, Fins & Skins Classic Adventures, Dirt Trax TV, Snow Trax TV, and Legendary Motorcar make up some of the over 700 television episodes that have broadcast across North America on networks such as Discovery Channel’s Velocity, Outdoor Channel, Sportsman Channel USA, Sportsman Channel Canada, Wild TV, TSN, OLN, Global TV, and DirectTV are just a selection.
Along with broadcast television, Simon has worked in the corporate sector of the media industry. From filming the construction of a water tunnel for electricity production to a Christmas concert for a Steel manufacturer, the list of corporate work is just as diverse. Ontario Power Generation and Niagara Parks along with Argo, Boston Whaler, General Motors (Corvette), Ontario Tourism, Niagara Fallsview Casino and Dofasco are just a selection of corporate clients he has had the privilege to work with.
With the ever growing, fast paced world of the media industry, Simon looks for new and creative ways to keep the viewer engaged.
