Bacon Bison Sloppy Joes

Description
These Bison and Bacon Sloppy Joes smothered with cheese is a great flavourful meal. It is easy on the wallet and is made in under 30 minutes!
Ingredients
- 2 pounds of ground bison
- 8 slices of bacon chopped
- 1/2 yellow onion finely chopped
- 1/2 cup of ketchup
- 1/4 cup of tomato paste
- 1 Tablespoon of Worcestershire sauce
- 1 Tablespoon of Dijon mustard
- 1/4 cup of beef broth
- 1/4 of your favourite beer
- 2 cups of sharp cheddar cubed
- 6 brioche buns
Preparation
- In a cast iron skillet, cook the bacon until crispy but still bendable. At medium to high heat this should take about 3 minutes. Once cooked remove the the bacon and drain all but 2 tablespoons of bacon fat. TIP: we save excess bacon fat for use in other recipes.
- Add the onions to the skillet with bacon fat and cook on medium heat until the onions have softened.
- Add in the ground bison and cook on medium for 5-7 minutes. Break apart the ground bison into raspberry sized chunks and avoid over-crushing.
- To make the sauce; add in the ketchup (you can also use your favourite BBQ sauce like Hip Fire & Spirit), tomato paste, Worcestershire sauce, Dijon mustard, beef broth and beer to the cooked bison. Mix thoroughly and cook until it thickens (approximately 5-6 minutes).
- Just before serving, add cubed cheese and bacon to the bison mixture and stir slightly to create puddles of cheese in the mixture.
- Toast the buns until golden. Once toasted, spoon the Sloppy Joe mixture to the bottom of the buns. Before topping the sandwich, you can add shredded cheese or more bacon if desired.
