Bacon Wrapped Bison Meatballs

Description
These little bite sized meaty goodness is a great snack trail side or at home on the deck. For an added level of flavour, use a wood chip tin or pellet tray to add a little smoke to your BBQ. We recommend a Hickory wood chip. Best served with a bowl of Neal Brothers Classic BBQ Sauce for extra dipping!
Ingredients
- 2 pounds of ground bison
- 1/3 cup of panko bread crumbs
- 1 egg
- 1 Tablespoon of Worcestershire sauce
- 1 Tablespoon of minced or finely chopped garlic
- Dash of Salt and Pepper to taste
- BBQ dry rub/seasoning
- 1 package of bacon (1 slice per meatball)
- Neal Brothers Classic BBQ Sauce
Preparation
- Combine ground meat, bread crumbs, egg, Worcestershire sauce, garlic, salt and pepper, a small dusting of BBQ dry rub/seasoning, a little BBQ sauce and mix in a bowl.
- Roll mixture into approximately 1.5 inch balls.
- Wrap each meatball with a slice of bacon.
- Dust all wrapped meatballs liberally with your favourite BBQ seasoning.
- Cook on medium heat turning occasionally to prevent burning the bacon to a temperature of Medium: 140 degrees F
- Before serving, baste cooked meatballs with BBQ sauce. We recommend Hip Culinary Fire & Spirit BBQ sauce and leave in BBQ until the sauce is glazed and sticky.
