Bourbon Glazed Bear Tacos topped with Roasted Corn Salsa and Cilantro Cream Sauce

Description

These bear tacos are perfect for a Mexican dinner night! Either for yourself, your family or entertaining for a crowd, these bear tacos are perfect balance of bold, sweet and tangy flavours.

Ingredients

Bear meat - shanks or shoulders work well

Bourbon Glaze

  • 1 cup bourbon
  • 1 pint blueberries
  • 1 large white onion, peeled and sliced thin
  • 1 large orange, juice and zest
  • 1 head garlic, minced
  • ¼ cup brown sugar
  • 2 tablespoons cup soy sauce
  • 2 tablespoons sweet & sour/plum sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon fresh ginger, peeled and minced
  • salt and pepper, to taste

Roasted Corn Salsa

  • 2 cups corn
  • ¼ cup pineapple (fresh or grilled), diced
  • ¼ cup red bell pepper, diced
  • ¼ cup red onion, diced
  • 2 tablespoon diced jalapenos, seeds and ribs removed
  • 2 limes, juice and zest
  • 1 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 tablepoon ground cumin
  • salt and pepper to taste

Cilantro Cream Sauce

  • ½ cup yogurt or sour cream
  • Up to ¼ cup fresh cilantro, minced
  • 1 lime, juice and zest
  • 1 tablespoon low-sodium taco seasoning
  • salt and pepper, to taste

for Serving

  • soft Tortillas
  • 2 limes sliced into wedges
  • ½ head green cabbage, shredded

Preparation

Directions:

  1. Prep your bear – carve from bone cut into large steak size pieces is possible.
  2. Sear you bear on grill. If pieces are too small to sear on grill then use your large skillet or dutch oven. Once seared place bear asside
  3. In large skillet or dutch oven with a lid, mix all the bourbon glaze ingredients until all combined
  4. Add seared bear to the glaze and cover and cook on low-medium heat until bear is at least 165° and fork tender to shred
  5. While bear is cooking, grill minimum 2 pineapple rings on the grill
  6. Toss the corn, pineapple, pepper, red onion, jalapenos, together in a large bowl.
  7. Add the remaining ingredients to mix, toss again, season to taste with salt and pepper.
  8. For the cream sauce, in a small bowl or resealable container, mix the Cilantro Cream Sauce ingredients and place in fridge until ready for serving
  9. When bear is cooked, place tortillas in foil on the grill to warm and shred the bear and leave in glaze
  10. Time to build your tacos! Place a spoon of glazed bear in a warm tortilla, add some shredded cabbage, top with corn salsa and cilantro cream sauce and enjoy.
