Description

These sweet potatoes are perfect as an appetizer or a side dish. The tastes of the islands is subtle but ginger, cinnamon and nutmeg leaves just enough spice to make these sweet potatoes a recipe that you will make over and over. The longer you cook them, they get sweeter and the edges get crispy. This is one to save for sure.

Ingredients

  • 2 1/2 pounds sweet potatoes, peeled, trimmed, and cut into wedges
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • 1 lime, juiced
  • 4 cloves garlic, peeled and finely chopped
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon nutmeg

Preparation

  1. Preheat BBQ to 425 F. Lightly oil a large foil roasting pan
  2. In a large bowl, whisk together oil, honey, lime juice, garlic, and spices.
  3. Slice sweet potatoes into wedges and toss to coat.
  4. Pour potatoes into roasting pan and spread out into a single layer.
  5. Roast potatoes, stirring occasionally until they are tender and caramelized.
