Caribbean Spiced Sweet Potatoes

Description
These sweet potatoes are perfect as an appetizer or a side dish. The tastes of the islands is subtle but ginger, cinnamon and nutmeg leaves just enough spice to make these sweet potatoes a recipe that you will make over and over. The longer you cook them, they get sweeter and the edges get crispy. This is one to save for sure.
Ingredients
- 2 1/2 pounds sweet potatoes, peeled, trimmed, and cut into wedges
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons honey
- 1 lime, juiced
- 4 cloves garlic, peeled and finely chopped
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon chili powder
- 1/8 teaspoon nutmeg
Preparation
- Preheat BBQ to 425 F. Lightly oil a large foil roasting pan
- In a large bowl, whisk together oil, honey, lime juice, garlic, and spices.
- Slice sweet potatoes into wedges and toss to coat.
- Pour potatoes into roasting pan and spread out into a single layer.
- Roast potatoes, stirring occasionally until they are tender and caramelized.
