Description

This peach and blueberry salad is an explosion of salty, sweet and fresh flavours. The lemon basil vinaigrette tossed with feta cheese is an easy and delicious treat to serve as lunch or served with your favourite grilled game for dinner.

Ingredients

  • 1 basket of fresh local blueberries
  • 2 fresh peaches diced
  • 2 english cucumbers halved lengthwise and thinly sliced
  • 1/2 cup of crumbled feta cheese
  • 2 Tablespoons of of fresh squeezed lemon juice
  • 1 Tablespoon of Dijon mustard
  • 1 Tablespoon of honey
  • 1 Tablespoon of Avocado oil (olive oil can be substituted)
  • Finely chopped basil
  • salt and pepper to taste

Preparation

  1. In a small bowl, whisk the Dijon mustard, honey, lemon juice, salt and pepper. once mixed well, gradually whisk the oil until its combines well.
  2. In a large salad bowl, combine the blueberries, peaches, cucumbers and chopped basil.
  3. Combine the vinaigrette into the large bowl of salad ingredients and toss gently to coat well.
  4. Add the crumbled Feta cheese and toss gently one more time to distribute the feta throughout.
  5. Serve immediately to enjoy the fresh crispness and refreshing taste of this salad.
