Description

This low carb chili is a hearty and filling meal that packs a ton of flavour. Not only is it full of flavour it is incredibly healthy and is even Keto friendly! This is a great recipe for a late year warm up meal.

Ingredients

  • 1 1/2 pounds of ground venison
  • 1 yellow onion diced
  • 1 green bell pepper diced
  • 1 jalapeno pepper minced
  • 1 clove of garlic minced
  • 1/4 cup of tomato paste
  • 15 ounce can of diced tomatoes
  • 2 cups of beef broth
  • 2 Tablespoons of chili powder
  • 1 Teaspoon of cumin
  • t Teaspoon of salt

Preparation

  1. Add the ground venison, onion and bell pepper to a large cast iron dutch oven and cook over medium to high heat. Break up the meat as it cooks and once cooked thoroughly drain any fat from the pan.
  2. Add the jalapeno, garlic, tomato paste, diced tomatoes, beef broth, chili powder, cumin and salt and stir well.
  3. Bring to a boil and reduce to a simmer. Simmer for at least 20 minutes but 1 hour provides the best taste and texture.
  4. Serve with shredded cheese, sour cream and fresh bread as desired.
