Venison Tenderloin with Roasted Vegetables

Description
For a hardy meal that is sweet and savoury, this is the one for you. Combine the perfect cut of venison tenderloin from your harvest or purchased from Northfork Bison with seasoned vegetables in Napoleon's rotisserie basket on the Prestige Pro 665.
Ingredients
- 1 large sweet potato
- 2-3 carrots
- 2-3 parsnips
- 1 large sweet or red onion
- 1 bell pepper - your choice of red, yellow or orange
- 220 grams of button mushrooms
- 2 tablespoons of honey
- 1 tablespoon of sweet BBQ rub
- 1-2 ounces of HIP Vodka Black
- 2 venison tenderloin
- Northfor Bison Wild Game spice
- olive oil
Preparation
- Coat venison tenderloin in oil then cover in Northfork Bison Wild Game spice generously and let sit for 15-30 minutes.
- Chop Sweet potatoes, Carrots, Parsnips and place into Napoleon's Rotisserie Basket and place over a medium to high heat for 5-10 minutes.
- Chop onion and pepper and add them and the mushrooms into the Rotisserie Basket and place back at a medium heat.
- Place tenderloin on the grill at a medium heat. Cook for about 5 minutes per side for medium/rare to medium doneness (135-140).
- Mix honey, sweet BBQ rub and Hip Vodka and drizzle over the basket to coat vegetables. Let cook for 3-5 minutes.
- For an added kick, add Neal Brothers Smokey Bold BBQ sauce!
