Description
This dish is perfect trail side, at the camp, on the deck or anywhere your BBQ or smoker is! Wild game sausages are incredible by themselves but when you add bacon, a cream cheese filling and a vodka maple glaze, they are a whole new level.
Ingredients
- 8 ounce of softened cream cheese
- 4 ounce of sour cream
- 1/4 cup of your favourite shredded cheese
- 1 1/2 Tablespoons of sweet BBQ rub.
- 3-6 wild game sausages depending on size
- 6-8 slices of your favourite thick cut Bacon cut in half
- 1 jalapeno diced - OPTIONAL
- 1/4 cup of maple syrup.
- 1.5 ounces od vodka, we recommend Hip Vodka Black..
- 2 Tablespoons of honey
Preparation
- Slice game sausages into 1/2 inch slices and wrap bacon and secure with toothpicks. We recommend Northfork Bison's Wild Boar bacon. They should resemble shot glasses.
- In a bowl combine the cream cheese, sour cream, shredded cheese, diced jalapeños and sweet BBQ rub.
- Place the filling in a piping bag (a sandwich bag with the corner snipped off works too) and fill each shot. Using a spoon works too.
- Place the wild game shots on your grill with indirect heat at a low temp of (250 °F) until the bacon is cooked to your desired doneness. should be around 30 minutes. For added flavour, add hickory chips to your smoker or a smoke box for your BBQ.
- To make the glaze, combine honey, vodka and maple syrup and whisk well.
- After 1 hour of cooking at 250, increase to 350 °F to cook the bacon so its crispy and the cream cheese mixture is golden brown. Glaze the shots well 5 minutes before removing from the BBQ or smoker.
- When plating, remove the toothpicks and glaze one more time and enjoy.
